Hope you are doing well! Last week I posted the perfect summer cake on my socials called Malinowa Chmurka aka Raspberry Cloud. It consists of 4 different layers and textures making it work so well together.

The bottom is either a thin layer of shortbread pastry or sponge cake. I personally prefer the bottom to be more crispy, so my first choice is always shortbread. The next layers consist of a jelly with either fresh or frozen raspberries, mascarpone whipped cream and meringue.

Little tips:

  • Since it is raspberry season I highly recommend using fresh ones but frozen works just as good, meaning that you can make this cake all year round!

  • I try to make as much things from scratch but when it comes to this cake I like to use raspberry flavoured powdered jelly packets. However, if you have the time I can recommend making homemade jelly.

  • The meringue doesn’t have to be perfect pearl white! For this cake it is better if the meringue has a slightly different colour because it contrasts well with the whipped mascarpone cream. Also the crunchiness gives it a nice texture.


Recipe Raspberry Cloud Cake aka Malinowa Chmurka

Makes a 23x23 cm square tin (with removable bottom) or 23 cm round. I use Masterclass baking tins

Makes about 12 portions
